Cheese and Bacon Potato Slices

We love potatoes, there are so many great things you can do with them, but it does get boring always making them the same way. I have been trying out new ways to cook potatoes and this one is my family’s favourite so far!

Cheese and Bacon potato slices

4-6 slices of bacon
1-3/4 cup of grated cheese
6-8 potatoes

Preheat oven at 375 degrees. Brush cookie sheet with bacon grease or you could spray with cooking spray

Wash and slice potatoes.

Place potato slices in a pot of water & cook until the water boils.
Boil for about 5-7 minutes. You want it cooked enough that when you Poke them with a fork and they are a little soft. You DON’T want them cooked through, or else they will fall apart.

Drain potatoes and arrange on greased cookie sheet,slightly overlapping. Lightly brush potatoes with bacon grease or vegetable oil.

Sprinkle on shredded cheese and chopped bacon.

Bake for 15 minutes until potatoes are cooked through.

Serve with sour cream & Enjoy!
