Baked Potato Rounds

I love potato skins, and order them almost every time I eat out at a restaurant, but I hate making them.  There’s so many steps to make them just perfect, that it’s just too much.   I found a few recipes online for baked potato rounds, and taking some ideas from all of the recipes, I made this one! They’re really easy and taste like potato skins! I made them as a side for dinner the other night, and the next afternoon (boyfriend was home from work, sick, boo) the boyfriend requested them for a snack/lunch.  I can’t even explain how tasty they are.

Ingredients
  1. 4 large potatoes
  2. 1/3 cup vegetable oil
  3. 3 cloves garlic, crushed
  4. 1/2 cup cheddar cheese
  5. 3-4 green onions, chopped
  6. Dash of - salt, pepper, onion powder, garlic powder, dried parsley, dried oregano
  7. Optional - bacon bits
Instructions
  1. Preheat oven to 375 degrees
  2. Clean and slice potatoes, skin-on, into 1/4 inch rounds
  3. Line 2 baking sheets with parchment paper
  4. Put oil in a shallow bowl/dish and add garlic & all spices
  5. Dip potato rounds in oil mixture, coating both sides, hold above oil dish to let excess drip off
  6. Place potato rounds on baking sheets, DO NOT OVERLAP
  7. Bake for 45 minutes, flipping every 15 minutes
  8. After the 45 minutes, top rounds with green onion, cheese, bacon, and place under broil for 2 minutes or until cheese bubbles.
Notes
  1. Serve with sour cream.
  2. This recipe makes enough for 3-4 people, or 2, if you want to have generous portions.
